I worked at a pizza place, and the dough dockers were always falling apart. You've got to put a bit of pressure on, most dockers just aren't up to it, plastic or metal. I selected this one, and it's held up for 6 months and shown no sign of wear. Plus, you can unscrew the roller components if they need extra cleaning.
